December = No Self Control

Well, December was a crazy month. (food-wise.) I could not stop eating Christmas goodies! I gave some away and I even resorted to throwing some away after Christmas, because I was so sick of having no self control around the stuff!

It’s shameful because I was even having a hard time controlling myself around candies that usually don’t tempt me so much. (hard candies, saltwater taffy, skittles, suckers, etc. I’m generally a chocolate girl)

Embarrassing story:
I told my husband to “hide” a bunch of the candy in his car, so that I wouldn’t eat it.  Well, the very next night I was out in his car scrounging for sugar.  He is not a very good hider, so it didn’t take much for me to find them.  (in the trunk.  good try, honey! )

Halloween confession

I’m sure most sugar addicts like myself have a love/hate relationship with Halloween. I remember as a kid it was my 2nd favorite holiday (1st is Christmas) and I looked forward to it all year.  Now, it’s part dread… because I know of all the candy I will eat. (and the crappy-ness I will feel and the few pounds I will gain)  But, on the plus side… think of all the candy (FREE candy) I get to eat!! (see, I told you it was a love/hate relationship! haha)   I love dressing up and I love halloween parties and trick-or-treating (I get to go again because I have kids – yippee!!)

Steel cut oatmeal – easy and healthy breakfast!

I think I may have mentioned this before, but we don’t eat cereal.  I decided to cut it out of our lives in favor of healthier breakfasts (and not so much wasted milk).  So, we have to get pretty creative with our breakfasts.  It can be hard at first to think up new and tasty breakfast ideas… especially ones that don’t take a lot of time.   This breakfast is the one that is our go-to FAST breakfast.  It is also great that my boys both LOVE oatmeal! (my  husband hates it, so we usually have it on weekday mornings).

Oatmeal is great because it is so versatile, you can add most fruits or nuts to it and it tastes great!  The combo we had this morning was Apples, cinnamon, and molasses.

The thing about this oatmeal that makes it so easy, is that you soak it overnight.   Steel cut oats take a really long time to cook, so it’s definitely not something I’m going to try to throw together in the morning.  Soaking them overnight makes it so easy!

Easy Homemade Fruit Roll-ups!!

There’s just something about summer that makes me think of dried fruit. Probably because my mom would always buy huge cases of fruit in the summer from local farmers and then we would can and dehydrate the fruit.  This summer I have been making a lot of fruit strips.  The kids love them, and my husband likes to take them in his lunch for work.

My kids go crazy for fruit, and of course they LOVE fruit snacks and fruit roll ups.  I am not a fan of those and I don’t like to give them the kind from the store because generally they are full of sugar or fruit juice.  Not that fruit juice is horrible, but if I can make my own fruit roll ups at home without any added sugar or fruit juice?  Um, yeah!  awesome!

Homemade Soft Butter!

I don’t know about you guys, but in our house (I live with all boys), we go through a lot of butter!  I love soft butter for using on toasts, waffles, pancakes, potatoes, etc.    I was kind of getting sick of paying around $8 for a tub of smart balance, and looking at the ingredients list was depressing as well.

Have you ever looked at the ingredients on one of the soft butters at the store? They are full of weird ingredients and hydrogenized oils.

I decided to try to make my own and I’m very happy with the results!  It’s yummy and healthy and easy to make!  Oh, and cheap!! 🙂

Sugar Binge – Emotional Eating

Yesterday was a bad day.  I won’t go into details, but I ran to the store with the intention of buying junk food to “make me feel better”.    Guess what sucks?  It didn’t work!  I ate so much garbage and felt so gross and crappy last night.   I really don’t know why I do this to myself… after last night though, I feel more determined to stop.

I think I am going to try and convince myself that I am pre-diabetic (which could actually be true, idk.  a lot of crappy-food eating americans fall into this category.)  And when people offer me garbage food at parties and get-togethers and work,  I’ll just be like, “Sorry, can’t.  Pre-diabetic.”  haha!  I just really hope it helps convince ME at the store.  “Oh, you want that chocolate??”  *sad face*  “Sorry, you are pre-diabetic.  Guess you will just have to eat healthy!”   Getting diabetes scares the crap out of me and I know that I am headed down that road when I eat badly.

Anyways, I’ve realized that I need a new thing to do when I’m emotional/sad/depressed.  The food thing just isn’t working out for me anymore.  I’m not sure what to do.  I know a lot of people exercise… but sometimes that isn’t possible.  Too late/dark/cold outside.   Any suggestions?  What do other people do?

Baking Tip – Silpats!! (and sweet potato chips!)

Best invention ever!!!!  Okay, that might be a SLIGHT exaggeration, but I’m not sure…. because I LOVE MY SILPATS!!  I am so happy that I read about them when I was learning how to make sweet potato chips in the oven.   Before I found out about silpats, I was using parchment paper.

Now, that I have silpats, making my homemade potato chips is so much easier. I also use them for pretty much all my baking needs.  NOTHING sticks to the things! they are great!

Almond Flour Chocolate chip cookies – our favorite!!

These cookies are so yummy, they have quickly become a new family favorite! My husband requests them almost every weekend. He says they are better than normal chocolate chip cookies!  That really means something coming from a Non-health-nut!

These cookies taste like toffee candy to me, I love them!  I have tried making them with egg before, because it makes them rise and have more of a cookie texture.  But, they are SO much better without egg!  They have such a different (better!) taste and texture to them.  Try them, you won’t regret it!  And, if you have a picky husband like mine, I bet he will love them too!!

I didn’t buy chocolate!

You guys will not believe this.  I went to 2 stores and did NOT buy any form of chocolate or refined sugar!  I am so proud.

I still decided to indulge tonight.  It’s really funny that this is what I chose instead of chocolate. haha!  Trust me, I even surprised myself.

It’s weird.  I walked past the cheese section and I saw a bunch of different dips.  Artichoke dip, spinach dip, and BLACK BEAN DIP.  I saw that and remembered my awesome black bean dip recipe.  It is so easy and so tasty.

So, I bought some cream cheese at the store and came home and whipped it up.  It is SO delicious!  And hey, guess what?  No sugar! haha!

Healthy No-bake cookies!

My husband actually calls these my “desperate-for-chocolate cookies”. lol! He knows me too well! Yes, I did originally create these in a moment of desperation and I’ve been tweaking them a little bit ever since. Now, my 3 yr old asks for them! He thinks they are awesome “cookies” (we use that term loosely around here).

Here is my favorite version of the recipe. Feel free to make your own little changes here or there.
