Spinach Cubes! (and smoothie recipe)

Okay, so I am not the best at getting greens in my diet. (I know I’m not alone.  ahem, people!)   And, I like spinach alright in salads and stuff, but I can NEVER eat the whole bag of spinach from the store before it goes bad.  It goes bad so fast!  So… a little while back I had a bag of spinach in my fridge that was going bad.  I didn’t know what to do to use it and I HATE to waste.  BAM!  I came up with this ingenious idea!  I puree’d the spinach in my food processor with a little bit of water until it became a green paste (yeah, its creepy looking).

Then, I put the green goop in an ice cube tray and froze it.  The next morning, I had Spinach Cubes!!  I got the spinach cubes out of the tray and put them in a plastic ziploc bag and stuck them back in the freezer.  Easy, instant, serving size spinach!  I throw a couple cubes into my smoothies now and I can’t taste the difference, but I know I’m getting some green goodness!

Beans in Brownies and other baked goods.

Okay, I will admit it. Beans really don’t belong in baked goods. I have tried it a few times and I just can’t get over the aftertaste. I just don’t like the weird texture/taste of the beans in my brownies.

The health nut in me wants to LOVE the idea of beans in my brownies and I have given the beans a few chances to win me over. No such luck. Sorry beans! You are more than welcome to join my dinner with a side of brown rice! 🙂 Continue reading

How to make coconut butter – it’s SO easy!

Recently I bought some coconut butter from amazon. It cost about $8 for a little jar of it.. and yes, it was yummy. Most importantly though, it is what I use to make my awesome peppermint patties.

I had run out of coconut butter, so I searched online to see if I could make my own. Turns out that I can, and that it is SO EASY, now I feel really stupid for even buying it the first time.

How to make your own almond flour – tutorial

Since I use almond flour in a lot of my recipes, I thought I would share with you all exactly how I make it. I’ve had questions from some readers asking me about that… and it’s really quite easy. A little time intensive, but very easy steps.

Almond flour is very low carb. It has good fat and protein in it, as well as fiber. It has a really rich flavor, and it fills me up! I also LOVE the taste of almonds, so that is probably another reason why I love it!

Fruits and vegetable composition parallel our bodies – interesting!

I found this info on another blog and I thought it was really interesting. Most of it seems pretty factual, though I’m not positive about all of it.  My awesome commentary is in italics… because I know that everyone loves to hear my opinions.  haha!

A sliced Carrot looks like a human eye. The pupil, iris and radiating lines look just like a sliced carrot! and Yes science shows that carrots greatly enhance blood flow and function of the eye. “Eat carrots to see in the dark”, remember that?

Tomatoes and Capsicum have four chambers and are red. The heart is red and has four chambers. All of the research shows tomatoes and bell peppers are indeed pure and important blood food.
