Chocolate Pumpkin Cup-muffin

I love pumpkin foods… pumpkin pancakes, pies, breads, etc.   I love all of the great pumpkin things that come with fall, but sometimes I can get a bit pumpkin-ed out…. especially after Thanksgiving.   Maybe it also has something to do with the changing of seasons in December.   At any rate, if you have leftover pumpkin puree’ sitting in your fridge like I do and don’t feel like making something pumpkin tasting… then this is your recipe!    Or if you are a chocoholic (also, like me), and want to make something healthier.   Then, this is for you, too!

Behold, the Chocolate Pumpkin Cupcake-muffin…. or Muffin-cupcake??  Cup-muffin,  muf-cuppin??  It’s not too sweet, but the ganache on the top makes it  quite decadent… which makes you wonder what it is.  A cupcake or a muffin.  I will let you decide.

My kids think they are cupcakes and they are thrilled with them.  I am thrilled to feed them these instead of a traditional cupcake.   This is a much healthier alternative.   It’s a win win!

Chocolate Pumpkin Cupcake-Muffins

1 c. Flour
1/3 c. Cocoa Powder
1 t.  Baking Powder
1/2 t. Baking Soda
1/4 t. salt
1/2 c. sugar
1/4 c.  coconut oil (or any oil you prefer)
2 eggs
1 3/4 c.  pumpkin puree’  (one 15 oz can)
1 t. vanilla

Mix the dry ingredients, then add the rest of the ingredients and mix well.

Bake at 350  for 15-20 minutes.

Ganache Topping

4 oz.  chocolate
1/2 c. cream

Heat on low  until it is all melted and blended together.

Let the cupcake-muffins cool, then spoon some ganache on top of each one.
