I love this salad! It is easy, quick, and VERY healthy! It is pretty filling as well, so it can actually pass as a main dish too, if you are looking for a light lunch. I like to have it for lunch a lot. It is light and crisp and doesn’t leave you feeling all gross and digest-y (new word i made up – when you’ve eaten too much and your body wants you to shut down completely so it can digest. lol!).
1 Medium sized cucumber (chopped with skin left on)
1 small tomato (optional – i make this salad without tomato a lot too)
8 olives (sliced up)
1/4c. feta cheese
1 t. olive oil
1 t. lemon juice
sprinkle of lime juice
sprinkle of sea salt and pepper
mix it all up and enjoy!
