Chocolate Review- Nestle Dark Chocolate chips

nestle chocolate chips

Okay, I am a complete chocolate addict. You should know this, even if you have only read a little bit of my blog.
I am obsessed with finding the perfect chocolate chip. I love to bake with them, snack on them, melt them and dip things in them. (Currently, my favorite are Guittard Extra Dark Chocolate Chips.)

I was at the store earlier today and saw a chocolate chip variety that I had never seen before. Nestle Dark Chocolate chips. I was intrigued. Naturally, I couldn’t resist trying them out.

They are pretty good. I mean, don’t get me wrong. Yes, I would rather have REAL dark chocolate. But, this is a pretty good alternative if you are desperate for some sweet chocolatey goodness! Continue reading

Beans in Brownies and other baked goods.

black bean brownies

Okay, I will admit it. Beans really don’t belong in baked goods. I have tried it a few times and I just can’t get over the aftertaste. I just don’t like the weird texture/taste of the beans in my brownies.

The health nut in me wants to LOVE the idea of beans in my brownies and I have given the beans a few chances to win me over. No such luck. Sorry beans! You are more than welcome to join my dinner with a side of brown rice! 🙂 Continue reading

How to make coconut butter – it’s SO easy!

coconut butter!!

Recently I bought some coconut butter from amazon. It cost about $8 for a little jar of it.. and yes, it was yummy. Most importantly though, it is what I use to make my awesome peppermint patties.

I had run out of coconut butter, so I searched online to see if I could make my own. Turns out that I can, and that it is SO EASY, now I feel really stupid for even buying it the first time.

Cucumber Salad – Yummy & Healthy Side dish!

yummy! cucumber salad

I love this salad! It is easy, quick, and VERY healthy! It is pretty filling as well, so it can actually pass as a main dish too, if you are looking for a light lunch. I like to have it for lunch a lot. It is light and crisp and doesn’t leave you feeling all gross and digest-y (new word i made up – when you’ve eaten too much and your body wants you to shut down completely so it can digest. lol!).

How to make your own almond flour – tutorial

fresh ground almond flour

Since I use almond flour in a lot of my recipes, I thought I would share with you all exactly how I make it. I’ve had questions from some readers asking me about that… and it’s really quite easy. A little time intensive, but very easy steps.

Almond flour is very low carb. It has good fat and protein in it, as well as fiber. It has a really rich flavor, and it fills me up! I also LOVE the taste of almonds, so that is probably another reason why I love it!

Cottage Cheese Pancakes?!

would you ever guess the secret ingredient? 🙂

Ever since I stopped buying cereal, I’ve had to get creative with breakfasts around our house. My husband LOVES pancakes and waffles, so I usually make them once a week or so.

I have been trying to stay away from refined grains and I’ve been experimenting with alternatives. Well, I came across these cottage cheese pancakes and have since made them several times. They sound weird, huh? But, they are delicious and healthy! Continue reading

Minty Chocolate Crinkle Cookies – gluten free and egg free!

Minty Chocolate Crinkle Cookies!

Okay, so I had a weak moment at the store today and I bought some Andes baking chips. Oh my gosh, they are so YUMMY! I am a sucker for mint and chocolate, it is one of the best combinations. After eating about half the bag (shh, don’t tell), I decided to make a yummy recipe with them.

I am so excited about how awesome these cookies turned out! They are so yummy, and the Andes chips are basically the only unhealthy ingredient… and you could substitute the baking chips of your choice in there. Also, it would be pretty easy to make these vegan and dairy free (just sub more coconut oil for the butter). A great thing about egg-free recipes is that you can eat the batter with no guilt!! yeah! I used that to my advantage, spoon and bowl licking.
