I am constantly trying out new recipes, and sometimes they really just don’t turn out as good as I think they will. A lot of the time, the picture with the recipe is really awesome. It makes me think it will be super tasty and then it flops. Such is the case for the blog today.
The other night I tried out a new recipe. Almond Flour Banana Bread (it also has coconut flour in it). Luckily, I only made a half batch… because it did NOT turn out well.
I really should have known, because I distinctly remember thinking the that batter was WAY too thick! I followed the recipe precisely (except I didn’t add chocolate chips), but it turned out VERY dry. Like, sahara desert dry. It was horrible! I tried my best to choke down a few pieces…. but I had to chug so much water to eat some. Not very enjoyable. Personally, I think the problem lies in how much coconut flour that it called for. I would cut down the coconut flour a lot or put some other type of liquids in it. Next time, I will probably try a recipe with JUST almond flour.
Coconut Flour Waffles – I tried out this recipe the other morning for breakfast. If you go to the website and look at the picture, you will know why I just HAD to make them. Don’t they look AMAZING???! I was so excited to try them. And, I will say that they weren’t bad… definitely not a total flop like the banana bread. But, they just didn’t live up to the high expectations set by that picture. I forgot to take a picture of the ones I made, but they did NOT look that amazing… they were pretty yellowish (from all the eggs) and they basically just tasted like eggs. (not that I don’t love eggs, i do.) I just like my waffles to taste, well, like waffles. ya know?
I like to post about my recipe failures (as well as my successes), so hopefully you guys can learn from my mistakes without actually doing them. And also, it’s pretty funny to laugh when things suck sometimes! What can ya do?
